Shakshuka in the South

Just as with books, recipes can allow you to travel the world. This is my first attempt at shakshuka. A dish of eggs poached in a sauce of tomatoes, olive oil, peppers, onion, and garlic, and spiced with cumin, paprika and cayenne pepper. The dish seems to have originated in Ottoman North Africa in the mid-16th century after tomatoes were introduced to the region by Hernán Cortés as part of the Columbian exchange. From there it made its way across the mid-East. I also understand it is a very popular dish in Israel… but then… I’ve not been to Israel.

I know there are a couple cafes in Boston that are reported to specialize in this dish. I have already placed it on my list for my next excursion to Bean Town…. And yes, I will share my experience.

But for now… this is a very tasty and flavorful dish .. I will repeat soon…
